Super Simple 4 Ingredient Tomato Soup

Who doesn’t love a grilled cheese and tomato soup on a dreary winter day?

Well, I had a craving for this comfort-food meal the other day, and decided to try making my own tomato soup. And it was a success!

It was so easy, and I only used four ingredients (not including the seasonings)!

I always have jars of homemade vegetable broth in the freezer for when the soup monster hits me. Of course, you can use store-bought vegetable broth in a pinch, but homemade is so much better – and healthier too, since it’s not loaded with sodium. And it’s basically free, since it’s made from vegetable scraps and water. Just call me Frugal MacDougal.

Back to the tomato soup. I literally just threw it together. First I diced up a small onion and sautéed it in butter in my stock pot. Then I added two pint jars of homemade vegetable broth, a can of crushed tomatoes, and salt, pepper, and basil to taste. I let that simmer for 45 minutes on medium-low, and then used an immersion blender until it was not quite smooth. So delicious!

To top off the meal, I made a grilled cheese with chunky slices of French bread and American cheese. Divine!

Four-Ingredient-Tomato-Soup

Ingredients

  • 4 cups vegetable broth
  • 1 onion
  • 1 16 oz. can crushed tomatoes
  • 1 Tbsp. butter
  • fresh or dried basil
  • salt & pepper

Directions

  1. Dice onion into small pieces and sauté in butter in stock pot.
  2. Add broth, tomatoes, basil, salt, and pepper. Stir, and simmer for 45 minutes on medium-low heat.
  3. Use immersion blender or regular blender to desired consistency.
  4. Make a grilled cheese and enjoy!
